FRESH PIZZA DOUGH

Serves 4.75 #
Prep time 1 hour, 20 minutes
Cook time 20 minutes
Total time 1 hour, 40 minutes

Ingredients

  • 4.5 each Whole eggs
  • 1.33 oz. Dry active yeast
  • 1 tb Sugar
  • 2.75lb High-gluten flour
  • .75 cup Dry milk powder
  • 1 tb Olive oil
  • 1 tb Salt

Directions

1. Dissolve yeast and sugar in 6 quarts of lukewarm water. Let stand for 10 minutes or until bubbly. Add all remaining ingredients and knead until dough is strong (10 to 15 minutes). Cover and allow to rise in a warm place for approximately 1 hour.
2. Punch down and scale. Place on oiled sheet pans making sure to brush top of pizza ball as well.

Note

Cook’s Notes:    The temperature of the water should be no more than 98 degrees when dissolving the dry yeast .
