Broccolini with Vanilla Butter Sauce

  • 3 each Shallots, minced
  • 1/4 cup Brown Sugar
  • 1 qt. Heavy cream
  • 4 oz. Butter
  • Salt and Pepper to taste
  • 3 tbs Vanilla bean paste


Step 1 Steam a batch of Broccolini
Add brown sugar and vanilla paste; mix well. Add heavy cream; turn heat to low. Reduce by one-third.
Step 2 Heat saucepot on medium; add olive oil. Add shallots when hot; sauté tuntil lightly caramelized.
Step 3 Remove from heat; add butter a little at a time. Season to taste. Drizzle over Broccolini
